Got Soy?

It is not unusual to have or know someone with diabetes mellitus. Diabetes mellitus has reached epidemic levels among African Americans and continues to thrive in such communities. Dieticians are constantly trying to discover benefits of various foods that can treat or cure diabetes. One of these foods is soy.

Diabetes is a syndrome characterized by chronic hyperglycemia and disturbances of carbohydrate, fat and protein metabolism associated with absolute or relative deficiencies in insulin secretion and/or action. There are two main types of diabetes: insulin dependent diabetes mellitus (IDDM) or Type 1, which is referred to as child onset or genetic diabetes and non-insulin dependent diabetes mellitus (NIDDM) or Type 2, which accounts for 90 percent of all cases. The risk of developing this type of diabetes increases with age, body weight and lack of physical activity.

Relatively uncommon among African Americans at the beginning of this century, Type 2 diabetes is now the fourth leading cause of death by disease among African American women and the sixth among African American men.

Such soy products as soymilk, tofu, tempeh, and textured vegetable protein are experiencing incredible growth and acceptance among the general public. Soy products can be used as an alternative for various foods and according to the American Heart Association, individuals should consume at least 25 grams of soy daily.

This nutrient-rich legume is known as the “miracle food” because of its many nutriceutical benefits. Soy continues to receive attention concerning its role in preventing, controlling and treating various diseases like diabetes. Diets enriched with soy have been documented in the diabetic population to improve glycemic index, increase sensitivity to insulin, decrease blood pressure and assist in weight management.

Although there is a negative stigma associated with soy foods, individuals should embrace the positive health benefits. Below is a recipe to get you started in incorporating soy in your diet.

Tasty Tacos

Ingredients:

-1 pound of tofu

-1 Tablespoon of vegetable oil

-1 package of taco seasoning (reduced sodium)

-2/3 cup of water

-8 corn tortillas, warmed

-1 can of vegetarian no fat refried beans

-1/2 cup of chopped onion

-2 teaspoons garlic

-Chopped tomatoes, lettuce, scallions

-Soy shredded cheese/ Salsa

Instructions:

-Drain and crumble tofu into small pieces.

-In a large nonstick saucepan add oil, chopped onions and garlic and let saut‚ under medium heat.

-Add crumbled tofu, cook till golden brown.

-Add taco seasoning and water to pan, cook until sauce is thick.

-Assemble taco.
